Italian Food Lovers Chef Network: more about Chef Tony and Cathy Mantuano

We are back with our new Guest Chef and wine expert for the Italian Food Lovers Chef Network, Chef and partner of Spiaggia Restaurant Tony Mantuano and wine expert Cathy Mantuano.

tony-and-cathy-mantuano We interviewed via email Tony and Cathy, and asked them a couple of questions about their Chef and wine experience and their love for Italian food.

Chef Tony Mantuano wanted to be a Chef because he “loves to cook“, as simple as that. According Chef tony Mantuano, “the secret of being a top Chef is being smart enough to know to leave out an ingredient. The most important ingredient in any dish is the one you leave out“, he said to us.

Chef Tony Mantuano’s favorite food is Cape Cod Potato Chips and his favorite cooking style is “Regional Italian food that respects tradition“. His definition of Italian cuisine is “Food that has respect for Italian culture and tradition“, while his definition of Italian gourmet is “Traditional food presented in a modern fashion for today’s palate“.

We also interviewed wine expert Cathy Mantuano, and she told us that her favorite food is “pasta because there are so many kinds of pasta and so many different sauces and preparations for it“, while talking about her cooking style she stated that she is “a fan of any cuisine that uses fresh, seasonal products as a base for its dishes. I like spicy dishes, as in Thai and Chinese food. I also like Japanese food. I love the spices of Middle Eastern cuisine“.

When asked about her definition of Italian cuisine Cathy Mantuano said that “Italian cuisine highlights top quality ingredients in season, prepared simply, using few ingredients“, while her definition of Italian gourmet is “freshly picked produce, handmade pasta, farm raised poultry and meat, artisanal cheese, estate wines“.

Chef Network Recipes: Chef Doug D’Avico presents Polenta with Ragu of Crayfish, Tomatoes and Curry

Italian Food Lovers Chef Network Welcome back to the Italian Food Lovers Chef Network! Today our Guest Chef Doug D’Avico from Trattoria N. 10 in Chicago, shares with us another gourmet recipe: Polenta with Ragu of Crayfish, Tomatoes and Curry.

As you might remember, Chef D’Avico’s favorite food is seafood, so it was no surprise that he sent us this fish gourmet creation, after sharing with us the recipe for a mouthwatering Octopus Carpaccio.

Academia Barilla Chefs We are also very curious to taste Chef D’Avico’s gourmet twist in Italian cuisine, due to the strong and spicy presence of curry in a traditional Italian dish such as polenta, a classic alternative to pasta from Northern Italy, made of boiled cornmeal.

POLENTA WITH RAGU OF CRAYFISH, TOMATOES AND CURRY
A recipe by Chef Doug D’Avico
(serves 4-6)

INGREDIENTS
For the polenta:

- 1/2 cup organic course ground corn meal
- 1 cup water
- 1 cup chicken stock
- 3 tablespoon Academia Barilla 100% Italian organic extra-virgin olive oil
- 1/4 cup grated Academia Barilla Parmigiano Reggiano

For the sauce:

- 1 lb. cleaned and cooked crayfish tails
- 4 oz. fresh corn kernels, cut off the cob or use frozen
- 4 oz. pancetta or smoked bacon, diced small
- 1/2 small sweet onion, cleaned and thinly sliced
- 1 clove of garlic, chopped
- 1/2 cup dry white Wine
- 1/2 tablespoon curry powder
- 28 oz. can Academia Barilla Peeled Cherry Tomatoes
- 2 tablespoon butter
- kosher salt, to taste
- freshly ground black pepper, to taste
- crush red chili flakes, just a pinch
- marjoram leaves, for garnish

PREPARATION

First start the polenta, bring the water and chicken stock to a boil. While constantly stirring, slowly add the polenta to the boiling liquid, this way you will not form any lumps. Reduce the heat to a simmer. Be careful as to not splat the hot liquid as it could cause a severe burn.

You will have to stir often so that the polenta cooks evenly and to prevent it from burning on the bottom of the pot. The polenta will take around 45 minuets and will be finished when the polenta has the consistency of oatmeal.

Next add the olive oil and Parmigiano, season to taste with salt and pepper. Drizzle a little bit of oil on top so a skin does not form and cover till ready to serve.

While you are making the polenta you can start the ragu. In a 2 quarter sauce pan, render out the pancetta until it starts to brown. Drain off half of the fat and add the garlic and onions. Using a med heat you are going to brown the onion to form the sauce without burning them.

After the onions are browned, add the curry and the white wine. Bring to a boil and reduce the wine by a third.

Crush the tomatoes with your hands and add to the sauce, add the corn, bring to a boil, then reduce the heat to medium and stir then cook until the sauce reduces by a third or is about the consistency of a tomato sauce. Make sure you are stirring the sauce often so that nothing sticks to the bottom of the pan and burns.

When the sauce is at the right consistency add the butter and season with salt and pepper to taste. At this point you can adjust the curry taste or add a small pinch of crushed red chilies and add the crayfish. Bring to a boil to heat the crayfish check the flavor one more time and simmer for 2-3 minuets and then get ready to serve.

To serve, make sure your polenta is still warm by stirring in the oil on top and rechecking your seasoning. Divide between the serving plates and then spoon the ragu over the polenta. Garnish with some fresh marjoram leaves and serve.

Italian Cooking Show in Miami

The Italian Cooking Show, now at its second edition, opened its doors to all Italian food lovers in Coral Gables, FL, last Thursday May 22 for a journey through Italian regional culinary traditions.

Don’t worry if you missed the opening the Italian Cooking Show, as the culinary event has been already scheduled on other dates throughout summertime: June 19, July 17 and August 21, always on Thursday.

We really like the event description on the show brochure by the Italy-America Chamber of Commerce SouthEast, so we report it here below:

The Italian culture is rich in history, art, classic architecture and popular tradition, making it an influential part of the history of Western civilization. As a result of continuous historical, geographical, social and cultural changes taken place for centuries, our culinary heritage inevitably acquires an inestimable value.

In the last 50 years, the Italian culinary tradition has become a universal and distinctive trademark of the Italian country and culture. The wander through Italy’s countless marvels can begin with one of its most revealing treasures: cuisine.

The wholesomeness and genuineness of the Italian products sharply contrast with the qualities of the numerous products of a lesser quality currently circulating in the US market and often misleadingly promoted as Italian.

miacucina-logo The Italian Cooking Show is hosted at the stylish MiaCucina Showroom (105 Miracle Mile, Coral Gables, FL 33134, Google Maps below for driving directions) in Coral Gables, with top Chefs from renowned Italian restaurants demonstrating the different regional cooking methods used in preparing traditional dishes (pairing wines will be served too).

Each of the 4 Italian Cooking Shows starts at 6:30 PM with cooking demonstrations from top Chefs, who will engage in Italian regional cuisine preparations until 8:30 PM. Cooking demonstrations are followed by an open reception and free tasting session, until 9:30 PM. and each of the 4 Italian Cooking Shows will be dedicated to the culinary traditions of specific selected Italian regions, according to the following schedule:

Thursday May 22 has been dedicated to the cuisine of Northern Italy: Piedmont, Lombardia, Veneto, Trentino.
Thursday June 19 will be dedicated to the traditional regional cuisine of Central Italy: Tuscany, Emilia-Romagna, Umbria, Marche.
On Thursday July 17 all the secrets of traditional regional cuisine from Southern Italy will be revealed, with an exploration of the cuisine of Campania, Abruzzo, Puglia and Calabria.
