A Gastronomic VIP Tour to Emilia-Romagna: Part 2 - Cooking Classes at Academia Barilla

Second episode of our “virtual gastronomic tour” that follows the agenda of the Academia Barilla Gastronomic VIP Tour to Emilia-Romagna organized and guided by Academia Barilla Culinary School Alumni Frank DiMaria.

After exploring Parma’s locations and initiatives included in the gastronomic tour with a previous post, today we will discover all the learning, teamworking and fun moments the tour guest will enjoy at the Academia Barilla Culinary Center.

Located right in front of the 5-star hotel where the tour guest will stay in Parma, the Academia Barilla Culinary Center will be like a second home in Parma for the VIP tour participants.

On Monday, September 22, day two of the VIP gastronomic tour, the first learning and fun moment at Academia Barilla is guaranteed. After breakfast, tour guests will be welcomed to Academia Barilla with a guided tour of the Culinary Center and the first hands-on cooking session in the morning, that ends with a group lunch based on the gourmet dishes cooked together.

Two days later, after discovering Parma, the Italian Food Valley with all its century-old food culture secrets (artisan food production, Medieval castles, the culinary culture and food specialties of Modena and Bologna) and right after a morning walking trip to the local outdoor market, a second hands-on cooking class at the Academia will focus on a menu that includes all the traditional gastronomy products discovered during the entire VIP gastronomic tour.

The group lunch in Academia Barilla that follows will be prepared by the tour participants, more food fun after the food learning!

Academia Barilla will be stage for a “farewell event with group dinner also on the evening of day five of the 6-day VIP gastronomic tour, with a gourmet dinner menu prepared by the Chefs of the Academia Barilla Culinary Center the tour guest have known in the previous days.

A Gastronomic VIP Tour to Emilia-Romagna: Part 1 Visiting and Enjoying Parma

As we already announced, we begin this blog post series with articles that are intended to make you wish you were here in Parma, at least for a week.

We took the inspiration from the calendar of events, initiatives and locations included in the 6-day Academia Barilla VIP guided gastronomy tour to Emilia-Romagna promoted by Frank DiMaria, so we decided to show you a little bit around beforehand.

Today’s post is dedicated to the discovery of Parma, which is the centerpiece of the Emilia-Romagna experience in this VIP gastronomy tour.
We wrote many blog posts about Parma in the past, being the capital of the Italian Food Valley and also home town to Academia Barilla and the Academia Barilla Culinary Center.

Last year we created a full virtual visit experience with slideshows, photo galleries and Google Maps, so we have plenty of content to tell you about our favorite city in the world.

One of the most classical pizzerias of Parma often populated by the local VIPs. Good choice, with a wood-burning oven the pizzas are always good, and even the other plates on the menu are a surprise…

Another gourmet surprise for the VIP tour guests is also a dinner at “Il Cortile“, a delightful local restaurant in the heart of Parma, amidst the picturesque winding streets of the city’s “left bank“. As Frank DiMaria describes it:

The restaurant, a symbol of the Old Parma that has retained its original appearance with its ample, inviting veranda. Il Cortile has remained faithful to its trattoria origins, but owner Mauro and his wife Maria have added a special touch to it.

Day one - Sunday, September 21

Arrival in Milano Malpensa. Pick up with private bus and transfer to Parma
Check in at Grand Hotel de la Ville (5-star) and relaxing time

06:00 PM - Evening welcoming “aperitivo” at the lounge bar of the hotel

07:15 PM - Group dinner in an authentic local well-known Parma Pizzeria

09:30 AM - After breakfast, welcoming to Academia Barilla
Tour of the culinary center
Morning cooking session
Lunch of what we cooked together

08:30 AM - After breakfast, departure for a visit to a Parmigiano-Reggiano cheese producer

To follow, visit to a Prosciutto di Parma producer
Along the way, pictures’ time at the romantic Castle of Torrechiara

12:30 PM - Visit to a wine cellar, tasting of typical products and lunch

02:30 PM - Transfer to the province of Modena for the visit to the Ferrari Museum

06:00 PM - Visit to an authentic Acetaia of Balsamic Vinegar

08:00 PM - Dinner at one of the best restaurant of the area, famous for the use of traditional balsamic vinegar

Lunch in a typical Bolognese osteria

Afternoon: visit to the Ferrari Museum

Happy Ferragosto (and yummy Summer Dessert Recipe)

There is no better symbol for summer than a watermelon, at least in Italy where its sweet and juicy pulp refreshes million of Italians (plus all the tourists) every summer - in July and August you can even buy watermelon by the slice in many public squares and beaches across Italy!

The Italian name for watermelon is anguria, but in Central Italy it is also called cocomero while in the South people calls it melone. No matter the name, everybody loves the juicy watermelon in summertime!

This is why we picked up a very summer-ish recipe for this Ferragosto (the Italian public mid-summer holiday on August 15) which is fresh, easy to prepare, and mostly made out of watermelon.

vissani-italian-cookbookWe browsed the Academia Barilla Gastronomic Library and found a cookbook by Italian celebrity Chef Gianfranco Vissani, “Il Vissani - 400 recipes in 100 menus proposed by Gianfranco Vissani” (2002, RAI Radiotelevisione Italiana Editions).

Our Ferragosto recipe of choice here at Italian Food Lovers definitely is Watermelon Chill with Sugar Grate, a recipe proposed by Chef Vissani and based on the very popular Sicilian summer dessert Gelo di Mellone. Ready? Let’s go to the kitchen!

WATERMELON CHILL WITH SUGAR GRATE

A recipe by Chef Gianfranco Vissani
(serves 4)

Preparation: 20 minutes
Cooking time: 45 minutes

INGREDIENTS

- 21 oz Watermelon
- 5.3 oz Icing sugar
- 2.8 oz Dark chocolate grains
- 3.5 oz Sugar
- 1 fl oz Water

PREPARATION

Using a food processor, blend the watermelon into a fine pulp. Then, slowly mix in the icing sugar.

Distribute the watermelon mix into cups, decorate with the dark chocolate grains and let it store in the fridge until it has reached the right consistence (approximately one hour).

When the watermelon mix is ready, decorate with an abundant amount of icing sugar on top.

To prepare the sugar grinds cook the sugar with water until it reaches a temperature of 200°F. Continue cooking until it has caramelized.

Place the pot into a container filled with cool water in order to stop the cooking process. Then spread the caramel onto parchment paper.

Using a fork, shape some crossed stripes obtaining a grind made of sugar. Put the sugar grind on top of the watermelon chill and serve.
