Ravioli from “La Dolce Vita”

Here is a recipe for the ravioli seen in the film “La dolce vita” by Federico Fellini (Italy, 1960), taken from the book “Il gusto del cinema italiano,” written by Laura Delli Colli (Cooper, 2008)

Ravioli Ricotta e Spinaci

Ricotta and Spinach Ravioli

Ingredients

For the ravioli:

  • 10 oz spinach
  • 1 ½ cup fresh ricotta
  • Parmigiano-Reggiano
  • 3 cups flour
  • 4 eggs
  • salt
  • pepper
  • nutmeg

For the sauce:

  • ½ cup butter
  • sage
  • salt
  • pepper
  • nutmeg

Instructions:

Wash and trim the spinach. Cook in boiling water, then drain and sqeeze out excess water. In a bowl, mix together the spinach, ricotta and butter. Then add an egg, salt, pepper, grated Parmigiano and a grinding of nutmeg.

Make the pasta dough by forming a well with the flour. Add 3 eggs, a couple tbsp water and a pinch of salt to the center. Mix together, knead the dough and then roll it out into a sheet. Use a pasta cutter to cut the dough into small squares. Place a ball of filling in the center of half of the squares and cover with the remaining dough. Seal the ravioli and cook for just a few minutes in a large pot of boiling, salted water. In a pan, melt the butter with the sage. Then remove the sage and toss the ravioli in the melted butter. Serve with freshly grated parmigiano.
