Looking for an easy recipe for a gourmet Mother’s Day?

Academia Barilla’s Executive Chef Nicola Bindini offers us an easy gourmet way out with Sebadas, a typical Sardinian pancake that can be also a nice gourmet gift for Mother’s Day, la Festa della Mamma in Italian.

Ready to go to the kitchen? Here is how Sebadas will look like after our Mother’s Day pastry session.

Sebadas Pancake

Recipe by Chef Nicola Bindini

(serves 4)


2 cups all-purpose flour
5 oz. eggs
1 cup water
Salt to taste
1 tablespoon lemon zest
Honey to taste
6 oz. Sardinian Pecorino Cheese


Place the bran and make a well in the middle, then place the eggs, the water with salt in the middle, and knead by hand for at least 15 minutes.

Add the butter little by little and knead until the dough results smooth and homogeneous.

Shape into a ball and let it rest for about 30 minutes in the fridge.

Roll out the dough with 1,5 mm thick (1 inch approx).
Shape the dough with a circular cutter with 4 inches diameter. Brush the dough with the egg and fill them with Pecorino cheese.

Cover with another disc of pasta and deep fry in extra virgin olive oil.

When cooked, sprinkle with sugar and honey.

Chef’s tips:

Close the end parts of the dough in order to avoid filling to come out.

Fry in plenty of oil and drain well each pancake.

  1. I need to make something for my school project and it has to be Colombian food. Can anyone give me some really good, non-alcoholic, recipes? The more the better, and things like deserts, such as cakes and all that good stuff. Though whatever you guys can give me I’ll be grateful for. Thanks in advance!.
